Old Elk Distillery is currently a production facility, with a vision to open a larger distillery in Colorado. The Old Elk Blended Straight Bourbon Whiskey recipe was created by the Old Elk Distillery team and Greg Metze. To help age and blend the bourbon whiskey, Old Elk worked with three key partners to ensure the quality and consistency of our barrel-aged blended bourbon. Every Old Elk Bourbon barrel is hand-selected by our distilling team, where they follow sensory and sampling criteria to ensure the barrels create a consistent blended profile year after year.

Old Elk Wheat N’ Rye Blended Whiskey
Traditionally, the bourbon proofing process takes 24-48 hours. However, we choose to do it for significantly longer (weeks instead of days) and in smaller increments to keep the liquid cool when going from barrel to bottling proof. We call this patient technique our “Slow Cut™” proofing process which is used for our flagship bourbon. We see this critical Slow Cut™ proofing step as not only adding to the ideal “smooth and rich” character of Old Elk Bourbon, but also demonstrating our ongoing commitment to making the highest quality and smoothest bourbon whiskey without cutting any corners and giving the product the right amount time it needs to be the very best.

Each spring and fall, a new edition to the Old Fitzgerald Bottled-in-Bond series is released. Inspired by an original 1950’s Old Fitzgerald diamond decanter, the packaging and series honor both the history of the Old Fitzgerald brand and the historic Bottled-in-Bond designation. The Old Fitzgerald line is well-known for its distilling pedigree, as the brand was first registered in 1884 and was eventually sold to “Pappy” Van Winkle during Prohibition.

Old Fitzgerald 25th Anniversary Bourbon
In 1996, a catastrophic fire destroyed the Old Heaven Hill Springs Distillery in Bardstown KY. To Continue its distilling heritage, Heaven Hill purchased Bernheim Distillery in Louisville, KY in 1999, which included the Old Fitzgerald brand. Distilled in 1999, this special release celebrates the 25th anniversary of Heaven Hill continuing the legacy of the Old Fitzgerald brand today.

As was the case for the past editions, this edition’s tax strip, which has always been a signature of transparency on bottled-in-bond products, will disclose when the liquid was produced and bottled.
The spring 2022 edition of Old Fitzgerald Bottled-in-Bond Kentucky Straight Bourbon Whiskey is the first 17-year-old of the nationally released series and features Bourbon pulled from across three floors of rickhouse V at Heaven Hill Distillery’s main campus.

This blend represents liquid from multiple floors and locations within Warehouse K, giving a more holistic example of the profile its barrels yield.
