$239.99Lark Distillery whisky casks were carefully selected by our friends at Wolf of the Willows, decanted, and sent on a journey across the Bass Strait. Filled with the Wolf’s Imperial Johnny Smoked Porter and left to age, they worked their magic before being emptied and returned to Tasmania, to be refilled with Lark single malt whisky. The result is the Wolf Release: a unique single malt whisky that reflects an adventurous and collaborative journey.
This year, the single malt chosen was from our Bothwell Distillery, home of Nant Single Malt Whisky. Selected for its punchy tropical and citrus notes, the spirit highlights the hop and roasted malt characters left in the casks by the beer, resulting in our Third Edition Wolf Release: a unique whisky that reflects a collaborative journey.

Every whiskey we create is an heirloom grain, terroir-driven flavor experience for our fellow whiskey hunters.
We always have and always will distill every drop we bottle. While it aged, we didn’t sell any whiskey for our first three years. Time is as critical ingredient as our heirloom grains. Every mash bill gets its own optimal distillation process, and we deploy time-intensive sour mash fermentation. We are the first Colorado distiller to bottle bonded whiskeys. For us, these steps are not extra, they’re mandatory to creating Laws Whiskey.

Laws Experiential Barrel Bourbon
Law Village Commentary: Our Laws Four Grain Bourbon was finished in Sauternes casks which previously held this soft, complex dessert wine from a small region of France. These well-used, toasted French oak barrels bring out subtle fruit and oak notes in our Four Grain Bourbon. A nose of honeysuckle and vanilla flows onto the palate with flavors of dark cherry, leather, and black tea. The rounded finish is long with hints of oak and clove.

Laws Experiential Barrel Bourbon Finished in Armagnac Cask
Laws Village Commentary: The oldest of the French brandies, Armagnac is comlex and rich. We chose to finish our Four Grain Bourbon in this cask, to bring out the subtle notes of fruit and spice. Aromas of fine leather, stewed stone fruit, and an aged Maduro cigar flow into flavors of malted chocolate, brittle and dark fruit. The finish is bright and citrusy with finely grained tannins. Balanced acidity leaves you salivating and waiting for your next sip.

Laws Village Commentary: First we made Four Grain Straight Bourbon. Then, Bee Squared Apiaries filled four of those emptied barrels with their Colorado honey. After the honey was harvested, we filled them again with Four Grain Straight Bourbon. And now, it’s in this bottle, just for you. A nose of alpine meadow and citrus flows into flavors of soft Columbine, black tea, and Rocky Mountain strawberries, finishing with a palate coating rich sweetness. Enjoy!

Introducing the Laws Experiential Barrel Straight Bourbon Finished in Port Casks, a true masterpiece of the whiskey-making craft. This exceptional bourbon is crafted from a four-grain recipe that includes 60% corn, 20% wheat, 10% rye, and 10% malt, making it a unique and flavorful spirit.
Distilled using the sour mash method and double distilled to ensure maximum flavor and character, this bourbon was first distilled on August 15, 2015, and has been carefully aged in a 53-gallon char 3 American white oak barrel a secondary finish in a 225L Ruby Port Cask.
This bourbon is non chill-filtered, allowing it to retain all of its natural flavors and aromas. Made with corn, centennial wheat, SLV Rye, Scarlet Barley, water, yeast, American white oak, Ruby Port barrel, and time, this bourbon is a testament to the craftsmanship and dedication of the distillers at LAWS Whiskey House.

Laws Four Grain Solera Aged Bourbon
Our solar-aged, straight bourbon whiskey finished in cognac casks starts with well-aged Laws’ flagship Four Grain bourbon. We migrate this aged whiskey to various-sized cognac casks, adding flavors and complexity from the French oak. These casks are then married in a 50-year-old, 60 hectoliter (1,600 gallons) cognac foeder for secondary solar-style aging. Every year we harvest just a portion of the mellowing whiskey, immediately topping up the vessel with new cognac finished four grain. This solar cycle creates a complex spirit with bright upfront bourbon flavor followed by nuanced cognac and a luxurious, rich finish.
