The Waco Downtown Farmers Market officially kicked off in 2011 with a mission to bring locally grown and produced goods to downtown Waco in order to support local farmers and artisans as well as to enrich the culture of our community. To commemorate this 10th Anniversary Balcones partnered with Valley Mills Vineyard to finish this 100% Texas Grown and Malted Barley Single Malt in their Texas Ruby dessert wine casks.

Balcones Wine Cask Finished Texas Blue Corn Bourbon
Aesthetic pursuits can sometimes become isolated and self-referential. Adding a new dynamic to a well-worn path can lead to new vistas and perspectives that invigorate and rejuvenate. To this end, we took our Blue Corn and finished it in west coast Grenache and Cabernet puncheons, softening the bold and oily pecan and leather notes with layers of ripe berries and supple tannin.

Balnellan PX Sherry Cask Finish
A limited quantity this Speyside single malt whisky was transferred from Bourbon casks into hand-picked PX Sherry butts to ”finish” the maturation for a number of months. This process of ”finishing” imbues the whisky with refined characteristics and most notably with tones of stewed figs, subtle sweetness and tempered with oak and vanilla spice.
The Speyside region is recognized as being the Premier region of Scotland for the production of the finest single malts. Speyside malts are often the sweetest of all whiskies with rich and fruity flavours together with a subtle delicacy of aroma.

Baltimore Pure Rye Uncut Straight Rye 14 Year Old
American whiskey evolved regionally in the early days. In the South, corn grew plentifully leading to the creation of bourbon. In the North, farmers grew rye leading to a distinct style known as Maryland Rye Whiskey. The demand was great for this bold and spicy whiskey and by the early 1900s, there were over 50 distilleries operating in Maryland with an output that rivaled that of Kentucky. This Maryland Heritage Series pays homage to many of the great Maryland Distilleries and its storied past.
