Old Elk Wheat N’ Rye Blended Whiskey
Traditionally, the bourbon proofing process takes 24-48 hours. However, we choose to do it for significantly longer (weeks instead of days) and in smaller increments to keep the liquid cool when going from barrel to bottling proof. We call this patient technique our “Slow Cut™” proofing process which is used for our flagship bourbon. We see this critical Slow Cut™ proofing step as not only adding to the ideal “smooth and rich” character of Old Elk Bourbon, but also demonstrating our ongoing commitment to making the highest quality and smoothest bourbon whiskey without cutting any corners and giving the product the right amount time it needs to be the very best.

Old Fashioned Mountain Corn Whiskey
Old Fashioned Mountain Corn is listed in a 1932 correspondence regarding patent registration from Theo Wiehe to Albert Blanton. The original letter, stored in the Buffalo Trace Distillery archives, shows handwritten notation from Blanton indicating the distillery owned Old Fashioned Mountain Corn. The claim “Made in the Heart of the Bluegrass” appears on many of their Prohibition whiskey brands from this time, highlighting the beauty of horse country and referencing a time before industrialized cities became the norm.

Each spring and fall, a new edition to the Old Fitzgerald Bottled-in-Bond series is released. Inspired by an original 1950’s Old Fitzgerald diamond decanter, the packaging and series honor both the history of the Old Fitzgerald brand and the historic Bottled-in-Bond designation. The Old Fitzgerald line is well-known for its distilling pedigree, as the brand was first registered in 1884 and was eventually sold to “Pappy” Van Winkle during Prohibition.

In 1996, a catastrophic fire destroyed the Old Heaven Hill Springs Distillery in Bardstown KY. To Continue its distilling heritage, Heaven Hill purchased Bernheim Distillery in Louisville, KY in 1999, which included the Old Fitzgerald brand.
