Perpetual Whiskey Project 7 Year Old Straight Bourbon
Good things come to those who wait, so we waited seven long years to open this special barrel of bourbon whiskey. After the angels has their share, we were left with a heavenly liquid copper of fruits and spices. The character of this spirit is bold yet delicate, presenting itself with sweet and herbal aromas of orange-blossom honey and jasmine tea. A first sip opens the palate to candied apple and subsequent tastes enhanced in maple syrup. The depth of toasted oak expresses itself as cardamom and nutmeg. Savory allure continues with pie spices, lingering in the heat of cinnamon and vanilla. Patience is best served neat over ice and shared in good company.

Perpetuity Scotch Whisky
Batch 1 really starts with this Deanston cask. As a distillery, Deanston has this wonderful cereal forward, nutty robust highland style. This cask was a solid foundation on which to construct the other elements of the blend because it really had that undeniable Scotch Whisky character.
The next part of the process was to establish a solid grain base to complement the flavour profiles of the malt. Firstly, a North British ex-bourbon American standard barrel which exudes lemons. Working in partnership was another cask from North British, this time the whisky was almost bourbon compared to Scotch. The wood influence has allowed depth that you expect from old grain with thick caramel and espresso notes.
The final stage was to add a bit of seasoning and rich first-fill sherry hogshead was the perfect top note, and like the Deanston, every drop was used. Lots of spiced apple crumble that balanced so well with the backbone of sherry giving those rich dark fruits, raisins and leather. The whisky was mouth-coating and so balanced for the age that it worked in tandem with the North British casks to bind these flavours together. 45.7% ABV

Pinhook 16 Year Old Bourbon Courage
The Last Two Original Barrels
Pinhook was founded in 2010 by long-time friends Sean Josephs, Charles Fulford, and Jay Peterson, who were inspired by a shared vision to bring a new perspective to bourbon. In 2011, they bought 20 barrels of three-year-old bourbon from Lawrenceburg Distillers in Indiana (now MGP) and shipped the barrels to Kentucky for aging. Over the next years, they visited Kentucky frequently to monitor their barrels and find inspiration in the birthplace of bourbon, ultimately releasing the first bottles of Pinhook in 2014. While they subsequently bought many more barrels from MGP, which were incorporated into Pinhook’s Vertical Series, only two barrels remained from the original 20 that were purchased to launch Pinhook. In celebration of the 10th anniversary of Pinhook’s inaugural vintage, “Bourbon Courage,” we are thrilled to bottle barrels 517 and 518 and share a small piece of our bourbon journey.

We blend and proof our whiskeys in annual vintages, a unique approach that allows us to embrace the nuances of each year’s barrels, which are naturally shaped by the barrel oak, mash bill, climate, and storage environment. Rather than replicating flavor profiles – the traditional method – we craft the best, not the same, whiskey every year.
We crafted this bourbon for those who enjoy the nuances of American Whiskey. We use the same custom mash bill as our straight bourbon, but age it for 5 years and bottle it at cask strength to accentuate its complex flavors and deliver a long, balanced finish.

Pinhook is a term for finding young thoroughbreds with champion potential and nurturing them to maturity, much like we do with our barrels. To honor this parallel with whiskey-making, each Pinhook vintage celebrates a promising racehorse just starting its racing career.
