Goose Island Bourbon County Biscotti Stout 2022 Release
At Goose Island, we believe ideas and inspiration can come from anyone in the Goose family, and our Biscotti Stout is a perfect example that came from our very own HR team. Inspired by the Italian desserts of her childhood, Jill Cerone, People Manager at Goose Island, dreamed up this variant after grabbing a box of chocolate-dipped biscotti from her cabinet. Working with the brewing team, Jill brought the flavor to life with notes of anise, marzipan, cocoa, and buttered toffee. The biscotti enhances flavors already found in our Bourbon County Stout and adds strong notes of nostalgia from your Italian grandma’s kitchen. One sip and you’ll be reminded of pizzelle cookies, Easter Pane di Pasqua and, of course, almond biscotti.

Goose Island Bourbon County Caramella Ale 2020
Caramella or ‘candy’ in Italian is a wheatwine aged in Larceny Wheated Bourbon barrels with apple, cinnamon, and natural caramel flavor added after aging. Just like last year, the sweet smoothness from the Larceny Wheated Bourbon barrels adds a lingering warmth that complements the added flavor nuance. It’s nostalgia-inducing flavors are reminiscent of a caramel apple. Our Lab Tech, Joey Tidei, created this variant as a tribute to his love of seasonal flavors. This luscious embodiment of caramel perfectly paired with a slightly-tart apple flavor will transport you to a crisp autumn day.

Goose Island Bourbon County Cherry Wood Stout 2021
This is fully matured Bourbon County Stout finished with toasted fruitwood — specifically, honeycomb-shaped cherry wood chips. The versatility of the cherry wood and honeycomb shape allowed for maximum flavor extraction, the company says, revealing characteristics like red fruit, ripe cherry and light toffee, which are not found in the original oak barrel itself. 14.3% ABV

Goose Island Bourbon County Classic Cola Stout 2021
Brewers Paul Cade and Jason Krasowski bonded over their love for a classic cola while creating the Classic Cola Stout, the company says. They added lime and orange juice and zest, plus coriander, cassia bark, nutmeg, brown sugar and vanilla to bring out the characters of the classic drink. 14.1% ABV

Goose Island Bourbon County Coffee Stout 2022 Release
In 2010, we released the first-ever Bourbon County Stout variants and our Goose Island Bourbon County Coffee Stout has been a fan favorite ever since. For the first time since 2017, we brought back a coffee variant this year in partnership with our friends and neighbors Intelligentsia Coffee. Intelligentsia relies on Burundi for some of the cleanest, sweetest coffees in the world that ultimately complement the quality and tasting notes of Bourbon County Stout. The specific coffee blend combined with our Imperial Stout is called Turihamwe, which means “together”, and is a perfect tribute to all the hands that go into making it – from the female coffee farmers in Burundi that produced the blend, to our friends at Intelligentsia, the first brand we worked with on a variant back in 2010. The result of this “togetherness” is another exceptional coffee variant featuring rich chocolate, coffee, and caramel flavors that will appeal to coffee drinkers and beer lovers alike.

Goose Island Bourbon County Double Barrel Toasted Barrel Stout 2021
Aged for one year in Elijah Craig’s Small Batch Bourbon Barrels, then another year in Elijah Craig Toasted Bourbon Barrels. In addition to the familiar chocolate, caramel and vanilla comes flavors of toasted marshmallow and a fruit and oak finish. This is only the second time the brewery has packaged a “Double Barrel” Bourbon County Stout. 16% ABV

Goose Island Bourbon County Fourteen Stout 2021
This pays homage to the popular Proprietor’s 2014 recipe, but adds rye to the mash bill. Layering cassia bark, cocoa nibs, panela sugar and coconut water, this stout has a sweet and spicy flavor profile.

Goose Island Bourbon County Kentucky Fog Stout 2020
We’re excited to debut our first-ever tea-inspired variant. Brewer Paul Cade brought this idea to life, inspired by his girlfriend, Martha, who prefers tea over coffee. Our Bourbon County Kentucky Fog Stout is a take on the London Fog tea drink. With that flavor profile in mind, we added Earl Grey Tea and Black Tea from Kilogram Tea, as well as clover honey from The Honey House, to make a Bourbon County Stout variant with a complexity like none before. Trust us, you’ll just have to try it.

Goose Island Bourbon County Proprietor’s Stout 2022 Release
The 2022 Proprietor’s Bourbon County Brand Stout is inspired by a love for cocktails and the vibrant hospitality industry here in Chicago. This recipe was dreamed up after two of our brewers, Jason Krasowski and Paul Cade, spent a night out on the town trying some of the best cocktails the city has to offer. The result is a brewer’s take on a jungle bird cocktail that combines banana, coconut, lime, and a new ingredient for the Bourbon County Stout family – pineapple. The flavors are innovative and fresh, but also share common expressions found in both bourbon and our Original Bourbon County Stout but bring out flavors unlike any other Proprietor’s before. Proprietor’s Stout will bring Chicagoans down to the tropics this Bourbon County Stout season, a welcome escape from the Chicago cold.

Goose Island Bourbon County Sir Isaac’s Stout 2022 Release
For years, brewers at Goose Island have brainstormed ways to incorporate figs in Bourbon County Stout, but faced a daunting task due to their subtle flavor. After fresh thinking from members of the Goose Island E-commerce team, Melissa Alleguez and Ryan Hubona crafted a recipe inspired by Melissa’s childhood memories of stealing fig cookies out of her grandma’s cookie jar during her summers on Lake Michigan. And thus, the fig cookie and graham cracker-inspired Sir Isaac’s Stout was created. Highlighting the dried fried profiles extracted from the bourbon in the barrels, our brewers used Black Mission figs (10,000 pounds of them, to be specific) to create this variant resulting in characteristics of dried fruit, honey, molasses, and citrus, all reminiscent of the classic fig cookie sold on shelves today.

Goose Island Bourbon County Special #4 Stout 2020
Bourbon County Special #4 Stout is an oatmeal stout variant of our original Bourbon County Stout recipe, also aged in bourbon barrels, that uses crystal oats to add a nutty character and a smooth mouthfeel. After barrel aging, we added Intelligentsia Coffee, both their cold coffee and single origin coffee beans from Ethiopia, called “Metad Buku,” to bring out a pleasant fruity coffee character. Lastly bourbon barrel-aged maple syrup from Bissell Maple Farm in Ohio is added which provides complexity to the nutty oats and coffee to round out the flavors, ultimately reminiscent of your breakfast ‘special’ at the local diner.

The Original Bourbon Barrel aged Imperial Stout. Our primary focus every year is to make this beer the best that it’s ever been, with the best ingredients, which includes the finest of bourbon whiskey barrels. This year’s Bourbon County Stout is aged in a mix of bourbon barrels from a variety of whiskey distilleries. Barrel-aged for a year to develop the complexity that only time can provide, Bourbon County Stout boasts a unique blend of flavors such as fudge, vanilla and caramel — topped off with a rich, complex mouthfeel.

The original. This rich imperial stout is blended from a mix of bourbon barrels from distilleries such as Heaven Hill, Wild Turkey and Buffalo Trace, each aged in freshly emptied bourbon barrels for 8-14 months. And, 30 years later, we continue Gregory Hall’s legacy and passion for making the best beer possible, starting with the best barrels the bourbon trail has to offer. This year, our Imperial Stout is aged and blended from freshly emptied bourbon barrels from Heaven Hill, Four Roses, Wild Turkey, and Buffalo Trace distilleries. Expect flavors of vanilla, dark chocolate, toffee, molasses, almond, and dried fruit.

Goose Island Proprietor’s Bourbon County Stout 2020
This year’s Proprietor’s Bourbon County Stout was inspired by third-generation Italian American brewer Emily Kosmal’s love of spumoni, a classic Italian frozen treat. Spumoni is a tri-colored frozen dessert that contains candied fruit and nuts between each layer, historically including flavors such as pistachio, cherry and chocolate. Blended with fresh pistachios, cacao nibs, candied Amarena cherries, and natural vanilla flavors, the 2020 Proprietor’s Bourbon County Stout is incredibly complex and layered with cocoa, nut, and dark fruit notes with hints of vanilla and oak. Emily, who also created the concept for 2016 Proprietor’s, is our first brewer to have two Proprietor’s concepts picked for release.
