Lark Distilling The Wolf Release 2020
$239.99Lark Distillery whisky casks were carefully selected by our friends at Wolf of the Willows, decanted, and sent on a journey across the Bass Strait. Filled with the Wolf’s Imperial Johnny Smoked Porter and left to age, they worked their magic before being emptied and returned to Tasmania, to be refilled with Lark single malt whisky. The result is the Wolf Release: a unique single malt whisky that reflects an adventurous and collaborative journey.
This year, the single malt chosen was from our Bothwell Distillery, home of Nant Single Malt Whisky. Selected for its punchy tropical and citrus notes, the spirit highlights the hop and roasted malt characters left in the casks by the beer, resulting in our Third Edition Wolf Release: a unique whisky that reflects a collaborative journey.

Starward Ginger Beer Cask #7
Our 7th release of this cult classic Ginger Beer Cask. First, we season ex-Starward whisky casks with our in-house ginger beer, a Starward secret recipe, which imparts the luscious citrus peel and fresh ginger notes into the staves. Then, a perfect blend of our whisky aged in both red wine and Apera oak casks is finished in these freshly emptied ginger beer casks. A strong and spicy ginger aroma is balanced by our hallmark tropical and vanilla notes. It’s big, it’s arming, it’s full of spice.

Colliding whisky worlds, we’ve taken our bright Starward red wine barrel-aged whisky and finished it in decades-old barrels from Islay. Scotland for 18 months. This whisky tells its own story, from bright tropical fruits from our spirit, red fruits from the red wine barrels through to a lingering sweet peat finish. Different for Starward whisky, unexpected in flavor.

The Gospel Straight Rye Whiskey
The Gospel Straight Rye Whiskey is our answer to a bold and rich American style whiskey, made in Australia using single-sourced grain and Melbourne’s dynamic climate to produce a unique rye whiskey unlike any other. It is full of flavour and spice, a deep and complex whiskey that reveals more of itself as you sip. It’s perfect on the rocks, or in old-school whiskey-forward cocktails.
FLAVOUR NOTES:
Full-flavoured rye with medium body and intensity, it perfectly balances the rye spice and vanilla oak influence.
NOSE: Buttery dark rye bread, with hints of spice and light toffee.
PALATE: Caramel vanilla, sweet allspice, clove, pepper and green apple.
FINISH: Dried red fruit and crème caramel, with woody spices.
HOW TO DRINK: Drink neat, on the rocks or as a great base to a Red Hook or Old Fashioned cocktail.
