After that, we simply open it up, bottle it as “cask strength” (meaning the whiskey is bottled at the same proof at which it was aged), and sell it exclusively in our tasting room. The result is a masterpiece of uniquely dark and complex flavors, intermingled with surprisingly bright notes and the exuberant spice of rye.

Talisker 1976 Prima & Ultima 46 Year Old
Whisky/Whiskey, Cask Strength Whiskey, Brands, Prima & Ultima Collection, Scotch Whisky, Single Malt Scotch, Talisker, AlcoholIn 1976 Scotland basked in a once in a lifetime heatwave which made the stills run hot, increasing copper contact, creating this highly unusual Talisker. Standing as the oldest-ever release from Talisker, this forty six year old whisky was rested in a single puncheon gaining further complexity to this exceptionally rare malt.
TASTING NOTES
Appearance: Deep amber. Outstanding large beading, excellent legs.
Body: Medium to full.
Nose: A mellow feel, with very light prickle perhaps just hinting at that Talisker spice. The aromas are complex and reserved, with fragrant and lightly oily top notes backed by a salty sea-breeze and a whiff of new hessian sacks, and beneath this a sweet suggestion of toffee. Even a drop of water reduces the complexity, as it releases a hint of shoreline rock pool and a thread of volcanic smoke.
Palate: Ultra-smooth, oily and slightly waxy in texture, the taste sweet to start, with saltiness, white pepper-spice and subtle smokiness, complete with a familiar peppery kick at the back, all combining to make this an experience to savour throughout. Thoroughly confident in character, it is easy to enjoy straight. A little water raises the sweetness at first, and cools the palate overall, though the pepper and smoke still come through.
Finish: Long, warming and sweet-smoky, with a lingering mouth-cooling aftertaste. More of this menthol-like effect is noticeable at reduced strength.

Talisker 8 Year Old Special Release 2021
As our fable goes, on the rugged Isle of Skye stood Talisker, an enduring distillery with a fierce protector of an otherworldly nature: the ferocious Sea Fury. Beneath the smoky, mist-draped surface of the island’s dark waters, this leviathan of the loch lay in wait, keeping watch over its ancient home, imparting the whisky that leaves its shores with its powerful and unmistakably brine-licked character. This furious spirit writhes with cereal aromas, soon enveloped by briny seaweed and mountain smoke. The soft oily texture smoothly insinuates itself, carrying forward a bold taste with licks of savoury salt, light sweetness and pronounced smoke. From our most heavily peated reserves, the elemental power of the sea is acclaimed, finishing long and lingering. The smoke endures; this sea-monster breathes fire.

As with all expressions of The GlenDronach, all of the natural colors are drawn from slow maturation in Spanish oak casks.

The Irishman Cask Strength 2021
The Irishman Vintage Cask is a unique marriage of Aged Single Malt & Aged Single Pot Still, matured in first-fill bourbon casks, non chill-filtered and bottled at 54.8% ABV.
Each bottle is presented in an elegant wooden cask, uniquely numbered, and with a dated certificate signed by Bernard Walsh, the co-founder of Walsh Whiskey and creator of The Irishman.
Describing the 13th edition of The Irishman Vintage Cask, Bernard Walsh said: “We have built a strong following for our Cask Strength vintages over the years, with many choosing to develop collections. The 2021 vintage has decadent notes of candied orange and cherries to the fore, while a subtle nuttiness builds slowly on the palate.”

The Singleton 19 Year Old Special Release 2021

A golden maiden, with the shimmering tail of a fish, known to sing a song of honeyed sweetness that drew listeners in to seek its beautiful source. This Siren’s song gave The Singleton its smooth and melodious nature – a scotch born of slow craft, rich with the bounty of autumn fruit, caramel and spice.
This is a malt that shimmers with sweet aromas of dried fig, apricot and orange peel over rich marzipan and vanilla cake. With soft and luscious textures, it flows sweetly, and ends with an elegant and waning finish, faintly savoury, hinting of nutmeg and ginger. From start to finish, blooming layers of flavor echo sweetly, lingering like a siren’s call.

The Singleton 1985 Prima & Ultima Single Malt Scotch 37 Year Old
Whisky/Whiskey, Cask Strength Whiskey, Brands, Prima & Ultima Collection, Scotch Whisky, Single Malt Scotch, The Singleton, AlcoholCasks which would have otherwise been used as part of a blend were rediscovered during the acquisition of a warehouse. The result is a thirty seven year old masterpiece from the last The Singleton of Dufftown 1985 casks. Slow crafting is the key to The Singleton depth of flavour and this elegant expression is no exception, with a fruity nose and lightly oily smooth texture formed by patient years in cask.
TASTING NOTES
Appearance: Deep amber, light walnut. No beading, long legs.
Body: Medium.
Nose: Mellow in feel, with very light prickle. The top notes begin oily and soon become fruity, suggesting a ripe Ogen melon or poached pears and baked apple. Beneath this there lie traces of flaked almonds and grated, dried coconut on a base of buttery short-crust pastry. Adding a drop of water moves the fruitiness towards boiled fruit sweets.
Palate: Lightly oily and smooth in texture, and slightly drying. A lightly sweet initial taste, mid-palate, then a spicier suggestion of salt, all briefly evoking a banana fritter. Easy to drink straight, and appreciably softer with water.
Finish: Of good length and elegantly drying, with a lovely, sweet warmth and a lingering aftertaste. Softer overall with water, which introduces a further hint of spice.
