This is the first in what will be an ongoing annual inquiry into unique varieties of barley bred outside the commodity system with flavor first as a goal. Colere Edition 1 is made with the varietal that began it all, Alba (a six-row winter barley) and intentionally matured in only used casks to relegate the oak influence to a supporting role and focus the attention on the grain itself.

American Whiskey, American Single Malt Whiskey, Whisky/Whiskey, Brands, Westland Distillery, AlcoholAs part of our Outpost Range of American Single Malt Whiskeys, Garryana is a limited annual bottling from Westland that pursues true provenance with the introduction of an entirely new species of oak to the world of whiskey. In our work, we create a record of the oak’s distinctive characteristics and reveal unique expressions of Pacific Northwest terroir.
In Edition 6, Garry Oak co-mingles with both Brandy and Sherry casks. The Brandy gives a bright filter to the savory spice of Garry Oak. The Pedro Ximénez, its classic darker fruits with muted sweetness. Both add something distinct while leaving enough space for the Garry Oak to shine.
