Matured in 100% first fill bourbon barrels before a finish of 5 months in Medoc Bordeaux Red Wine Casks bringing wonderful red fruits to this first unpeated Malts Festival Limited Edition. Crushed red berries with floral notes of rose and violet with heather honey and maritime breeze on the nose. The palate opens on a honeyed sweetness with vibrant strawberry and apple, lime citrus and toasted oak vanilla. A wonderfully long finish with warming spice of cinnamon and aniseed.

The 11-year-old Pedro Ximénez Wood Finish was initially matured in American oak barrels for over nine years. The additional period of maturation in richly seasoned dessert sherry puncheons results in a sweeter, fruitier flavour experience.

After over ten years in American oak, the 12-year-old Ruby Port Wood Finish enjoyed secondary maturation in pipe casks which were previously used to age young, vibrant fortified wine from Portugal. As well as bestowing a vibrant ruby red colour on the spirit, the wood has added a depth of spicy ginger, damson jam and grape must.
Color: Ruby Blush.
Nose: Lashings of heather honey, grape must, treacle, bananas and ginger.
Taste: Heather honey, toffee, damsons and grape must, fused with orange peel and ginger.

The 13-year-old Madeira Wood Finish was re-racked from American oak barrels into casks that previously held wine made from Malvasia grapes – a richer Madeira style. This additional aging period has imparted tones of juicy pineapple, sugared almonds, and stone fruits.
Color: Orange Gold.
Nose: Waves of vanilla, apricots and plantains, with almonds, peaches and pineapple.
Taste: Vanilla, treacle, apricots and peaches, fused with almonds, grapefruit and pineapple.

GlenAllachie 2012 Vintage Cuvée Wine Cask Finish
The 9-year-old marries single malt finished in casks that previously held four types of premium European red wine: Languedoc, Recioto Della Valpolicella and two undisclosed Premier Cru Classés.
A French term, ‘Cuvée’ is used in the wine sector to reference a blend that typically comprises more than one variety of grape. The Speyside-based distillery has applied the description to whisky “by combining single malt matured in wine casks from multiple wineries.”
After primary maturation in American oak ex-Bourbon barrels, the spirit underwent over 20 months of additional aging in the various wine barriques within the distillery’s on-site warehouses.
The casks were expertly obtained from four fine wineries located in world-renowned regions in France and Italy by distinguished whisky maker, Walker, thanks to his exceptional network of connections with niche producers.
Bottled at 48% ABV, the 2012 Vintage bronze liquid is presented without added colouring and unchill-filtered.
TASTING NOTES
Color: Golden Bronze.
Nose: Bursting with orange blossom, espresso, maraschino cherries and honeysuckle, with hints of candied stone fruits, hazelnuts, lavender and cinnamon.
Taste: Waves of dark chocolate, red currants and burnt coffee beans, followed by crystalised almonds, blackberries and orange zest, with ginger and liquorice on the finish.

TASTING NOTES
Nose: Brandied honeycomb, molasses tart, and spiced blood orange, with bursts of cocoa, black winter truffle, and caramelized brown sugar.
Taste: Roch chocolate, warm baking spices, and clementine zest, followed by molasses orchard fruits and crystalized ginger with black cherries and raised butter on the finish.

GlenAllachie 21 Year Old Batch Number Three
The new ultra-premium small-batch Scotch whisky marries single malt matured in three vintage Pedro Ximénez Sherry puncheons.
Each cask was personally selected and expertly blended by industry leader, Walker, who over the course of his 50-year-long career has earnt recognition for demonstrating exceptional wood management capabilities and peerless sensory instinctiveness.
Chosen from the Speyside-based distillery’s enviable inventory of over 50,000 casks held on-site, the Spanish Sherry casks have imparted bold and complex flavour attributes, joining the distinctive heather honey character of The GlenAllachie’s house style.
The antique walnut-hued liquid is said to deliver refined qualities of “black grapes, fresh espresso, brandy butter and stem ginger, leading to indulgent dark chocolate fondant”.
Encased in a luxurious suedette-lined pine green box with gold foil detailing, the whisky was bottled at its natural cask strength of 51.5% ABV, with no added colour and without undergoing chill filtration.

Nose: Waves of black grapes, raisins and dark chocolate orange, with hints of coffee, stewed fruits and treacle syrup.
Taste: Lashings of heather honey, cocoa dusted truffles and sultanas, followed by bursts of espresso coffee, mixed currants and brandy butter, with gingersnaps on the finish.

From the outset of working with the GlenAllachie spirit, Master Blender Billy Walker continually expressed his desire to use our vintage stocks to craft a truly outstanding thirty year old. With this objective in mind, he has meticulously supervised the development of the slumbering whisky within each earmarked cask until optimal interaction between distillery and wood was achieved. Bottled at cask strength of 48.9%, non chilfiltered and natural colour, this small batch release truly showcases GlenAllachie in its purest form, the perfect unison of cask and distillery character. A combination of nine hand-selected PX, Oloroso and Chinquapin Virgin Oak casks, Batch 1 is limited to just 2,000 bottles worldwide.
